Welcome to the wonderful world of tea. A great way to get started is to join any one of our basic classes. No prior experience is needed, only an interest to learn and explore. Advanced classes will be of interest to enthusiasts who are eager to explore the finer aspects of tea brewing and appreciation.

Our classes are kept very small with only 4 seats per session. Classes are available in English and Mandarin.

Tea Tasting and Identification

In this class you will learn about the four main types of Chinese tea through the following points: origins, processing and flavour profile. We will brew and taste each type of tea so you leave with a deep understanding of the unique character of each type of tea.

茶叶辨识和品茗课

这个课程将通过以下几点讓學員了解茶叶的六个主要类型:起源、加工和风味特征。课堂间将冲泡和品尝六大茶类和两种精制加工茶类,学员将學習辨識每一种茶类,理解其个性背後的原理。课程将以中文进行。上课前提醒,建议学生不要空腹来上课,并且不要涂抹香水或口红,因为强烈的香气将影响闻香和品茶的准确度。

Tea Brewing - Basics

Tea brewing goes beyond merely preparing a cup of beverage and embodies the spirit and ideology of the craft as an art form. In this class you will learn the basics of tea brewing using the small pot method; how to make a good brew, how to use tea utensils, the basics of appreciating tea, and the mannerisms guiding it.

Material Sensing Workshop - Water

Tea is composed of two components: tea leaf extract and water. Producing a good brew typically places much emphasis on the quality of tea leaves, and little attention is given to the water used. When is it suitable to use distilled or tap water when brewing? Is mineral water always the best choice for all types of tea? This workshop explores the variety of water types and examines the impact of mineral content, pH levels, texture, and taste on tea infusions.

This is an advanced class for students who are already familiar with tea brewing. The session will be interactive rather than instructive, meaning participants will taste and discuss flavour notes as a group.

Material Sensing Workshop - Fire

Do heating methods make tea taste any different? Does using charcoal as a heat source really make the water taste better? What about gas or electric heated water? Are there noticeable differences in flavour and the act of brewing or is it all in our imagination? This workshop is set to experiment with different methods of boiling water and assess the associated fact and fictions in tea brewing.

This class will be conducted in English, with additional explanation in Mandarin where necessary.
